Maple Biscotti

Last night I was searching through different clean recipes on the internet that I wanted to try. This morning I decided to make my own version of Jamie Eason’s Orange Almond Biscotti. As usual, I never follow a recipe exactly and wanted to put my own twist on it, so I came up with Maple Biscotti.


2 c. oat flour (I just grinded up my own oats)

1 c. Stevia

1 tsp baking powder

1/4c. wheat germ

2 tbl flax seed

1 tsp almond extract

1 tsp maple extract

1/8- 1/4 c maple syrup

4 egg whites

4 oz apple sauce



Preheat oven to 350 degrees. Mix dry ingredients in large bowl and mix wet ingredients in a medium sized bowl. Add the wet ingredients to dry ingredients and mix together. Spray baking sheet with a nonstick pan and spread mixture on the sheet. Bake for 20 minutes, remove and let cool slightly and cut into slices, and then bake another 15-20 minutes.
