Thank you to all of you who continue to follow along with each new post and to those of you who even go out of your way to let me know you enjoy reading what I am writing. I love writing (about things I like) and it is even better when someone takes a minute out of their day to tell me to keep it up or that they have read a post and it stuck with them.
I am not mentioning this with the hopes I will receive more words of encouragement–I just wanted to thank all of you, regardless if you have read a few posts or are a religious reader! With that said, if you do have constructive criticism or are interested in reading more about certain topics please let me know! These things will help me become better as well as provide you readers with more of what you want to read 🙂
I know my one goal has been to include more recipes, but my diet has gotten pretty boring due to my caloric restriction, so it takes a lot of work to make anything I eat sound all that amazing 😉 But here is a recipe I took from LBC that is awesome..i made it last night and will have the second portion of it tonight! I alter everything, so the recipe below is my recipe, but I linked to theirs in their name.
Chocolate Ice Cream
- 1C. fat free cottage cheese
- 1 heaping Tbl cocoa
- 3 Tbl. Walden Farms chocolate Syrup (this is calorie free–supposedly made with natural products..minus the splenda)
Add cottage cheese, cocoa, and 2 Tbl. of the chocolate syrup to a magic bullet or small blender. Blend until the cottage cheese is dissolved. Separate into two different containers (makes 2 servings) and then put in freezer. Take out of freezer about 30 min prior to consumption. Add the 1Tbl of chocolate syrup on top for an extra chocolate kick! I would add pb to this to make things even better, but I didn’t have enough fat macros left. You could also add protein powder, but I add protein powder to my egg whites to make protein pancakes as a before bed snack–2 meals are always better than one 😉
