Cauliflower Thin Crust Pizza

All day I was craving bad food that is not in my diet plan such as ice cream, pizza, etc.  Just shopping in Giant Eagle was a struggle, but I had my list and I got out with only the things I needed.  Everyone will have these days, the trick is to fight through them and find healthier alternatives that will satisfy your cravings!  So I decided to make cauliflower pizza!



  • 1c. cooked, riced cauliflower
  • 1c. fat-free mozzarella cheese
  • 1 egg, beaten
  • 1 tsp. dried oregano
  • 1/2 tsp. minced garlic
  • pinch of sea salt/pepper
  • toppings of your choice



Pre-heat oven to 450 and spray a cookie sheet.

Break up a head of cauliflower into pieces and add to food processor and pulse until cauliflower looks like grain.  Add cauliflower to a bowl and microwave for 8 minutes.  A head of cauliflower will make multiple cups, so make sure to only use 1c. and save the extras for future pizzas.  Mix  1c. cauliflower with egg, cheese, oregano, garlic, and sea salt/pepper.  Spread mixture onto cookie sheet to your desired thickness (the thinner the crust, the  more crunchy and done the crust will be).  Place in the oven for about 15-20 minutes or until lightly browned on the surface.  Take out of oven and add desired toppings and then broil for a couple of minutes (or until you feel it is done).
