Banana Protein Muffins

Wet Ingredients:

1 c mashed bananas

2 large egg whites

6 oz greek yogurt ( I think I will try applesauce next time since greek yogurt made the muffins more sour tasting than I would prefer–but good protein source!)

Dry Ingredients:

3/4 c whole grain flour

1 tsp. vanilla

1 tsp. cinnamon

1 tsp. nutmeg

1 tsp. baking powder and baking soda

2 scoops protein powder (I used About Time vanilla)

1/2 c. baking stevia

1/4 c. crushed walnuts (optional)

Directions: Preheat oven to 350 degrees and spray a muffin pan. Mix the dry ingredients in a large bowl and mix wet ingredients in medium-sized bowl. Add wet ingredients to dry ingredients and mix until combined. Fill muffin pan 3/4 full and cook for 16-20 minutes. Muffins are done when toothpick is removed cleanly.
