Quinoa can be cooked many different ways with a variety of spices, seasonings, or accompaniments. For a sweet change, I decided to make a more dessert-like quinoa dish!
1c. Dry Quinoa (makes 4 servings)
1 Mashed banana
1-2tbl. Cinnamon (or to taste…I love cinnamon)
1 tsp. Nutmeg
1 tsp. Vanilla extract
7 Crushed walnuts halfs
Cook quinoa according to directions on package. While boiling, add vanilla, cinnamon, and nutmeg. When quinoa has soaked up most of the water but still has about 5 min left, add mashed bananas and crushed walnuts. Serve when quinoa has reached desired texture.
